Description
A heartwarming, tangy cherry juice inspired by Eastern European kompot. Perfect served hot or cold, sweetened or spiced, for any occasion.
Ingredients

- 2 cups fresh or frozen cherries, pitted
- 4 cups water
- 1–2 tbsp honey or maple syrup (optional)
- 1 tbsp lemon juice
- Optional: 1 cinnamon stick, 1 star anise, fresh mint
Instructions
- Prepare Cherries: Wash and pit fresh cherries or use frozen ones.
- Simmer Fruit: Combine cherries and water in a pot with optional spices. Bring to boil.
- Cook Down: Simmer on low for 25–30 minutes, stirring occasionally.
- Flavor Boost: Stir in honey/maple syrup and lemon juice after cooking.
- Strain Juice: Strain into a pitcher, pressing lightly on solids to extract more juice.
- Serve: Serve hot, or chill and serve over ice.
Notes
- Adjust sweetness to taste or skip for unsweetened.
- Add ginger or cloves for a spiced winter version.
- Use leftovers as a dessert topping.
