Homemade Cherry Juice

A heartwarming, tangy cherry juice inspired by Eastern European kompot. Perfect served hot or cold, sweetened or spiced, for any occasion.

Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 4 cups water
  • 12 tbsp honey or maple syrup (optional)
  • 1 tbsp lemon juice
  • Optional: 1 cinnamon stick, 1 star anise, fresh mint

Instructions

  1. Prepare Cherries: Wash and pit fresh cherries or use frozen ones.
  2. Simmer Fruit: Combine cherries and water in a pot with optional spices. Bring to boil.
  3. Cook Down: Simmer on low for 25–30 minutes, stirring occasionally.
  4. Flavor Boost: Stir in honey/maple syrup and lemon juice after cooking.
  5. Strain Juice: Strain into a pitcher, pressing lightly on solids to extract more juice.
  6. Serve: Serve hot, or chill and serve over ice.

Notes

  1. Adjust sweetness to taste or skip for unsweetened.
  2. Add ginger or cloves for a spiced winter version.
  3. Use leftovers as a dessert topping.
