Description

Naturally sweet and vibrant, these homemade fruit popsicles come in four delicious variations: Peach Strawberry Yogurt, Minty Watermelon, Blackberry Lemon, and Orange Mango Coconut. Perfect for hot days and healthy snacking.


Ingredients

Peach Strawberry Yogurt Popsicles:

3 cups strawberries (pureed to 1½ cups)

3 cups peaches (pureed to 1½ cups)

2 tablespoons honey (divided)

⅔ cup vanilla Greek yogurt

Minty Watermelon Popsicles:

3 cups watermelon slices (divided)

1 tablespoon fresh mint leaves

1½ cups coconut water

2 tablespoons lime juice

1 tablespoon honey

Blackberry Lemon Popsicles:

⅔ cup lemon juice + zest

2½ cups vanilla Greek yogurt

2½ cups blackberries

2½ cups mixed berry Greek yogurt

Orange Mango Coconut Popsicles:

4 cups mango (divided)

2 cups coconut milk (divided)

3 tablespoons orange juice

3 tablespoons honey


Instructions

Peach Strawberry Yogurt Popsicles:
1. Blend strawberries with 4 tsp honey; set aside.

2. Puree peaches with 2 tsp honey; set aside.

3. Layer strawberry, yogurt, and peach in molds; repeat. Tap gently.

4. Swirl with a spoon and insert sticks. Freeze 6+ hours.

Minty Watermelon Popsicles:

1. Blend watermelon, mint, coconut water, lime juice, and honey.

2. Dice remaining watermelon and place in molds.

3. Pour in mixture and insert sticks. Freeze until firm.

Blackberry Lemon Popsicles:

1. Whisk lemon juice, zest, and yogurt. Blend blackberries with mixed berry yogurt.

2. Alternate lemon and berry mixtures in molds.

3. Tap molds, insert sticks, and freeze overnight.

Orange Mango Coconut Popsicles:

1. Blend mango with 1½ cups coconut milk, orange juice, and honey.

2. Dice remaining mango and add to molds.

3. Add mango blend, then plain coconut milk. Insert sticks and freeze.
