  • 1 tsp matcha powder
  • 1 umeboshi plum or 1 tsp umeboshi paste
  • 1 slice fresh ginger, grated
  • 1 thumb-sized piece dried kombu
  • 8 oz warm water (160–170°F)
  • Optional: lemon juice or honey

Instructions

  1. Grate ginger, measure matcha, and break kombu into smaller pieces.
  2. Warm water to 160–170°F, then let it rest for 30 seconds.
  3. Steep kombu in the warm water for 5 minutes.
  4. Whisk matcha with a splash of warm water until frothy.
  5. Remove kombu and stir in umeboshi, ginger, and whisked matcha.
  6. Adjust taste with lemon juice or honey, then serve immediately.

Notes

  • For a milder broth, soak kombu briefly before steeping.
  • For plant-based protein, add soft tofu or edamame.
