Ingredients

1 cup fresh lemon balm leaves
2 cups filtered water
1 tsp freshly grated ginger (optional)
Juice of ½ lemon
1 tsp raw honey (optional)
Instructions
Boil 2 cups of filtered water until gently bubbling.
Add lemon balm leaves to a teapot or infuser.
If using, grate ginger and add to the herbs.
Pour the hot water over the herbs and cover immediately.
Steep for 7–10 minutes.
Strain the tea into a cup.
Add lemon juice while still warm.
Optionally, stir in raw honey for a touch of sweetness.
Sip and enjoy.
Notes
For a stronger iced version, use only 1 cup of water and pour over ice.
Substitute 1 tablespoon of dried lemon balm for every 1 cup of fresh.
Avoid boiling the leaves directly to preserve delicate oils.
