Ingredients

- 20–30g dried sliced organic ginger
- 2 organic lemons
- 1.5 liters of water
- 2 tablespoons honey (optional)
Instructions
- Bring 1.5 liters of water to a boil.
- Add dried ginger and simmer for 15–20 minutes.
- Wash and thinly slice lemons.
- Remove infusion from heat and let cool slightly.
- Stir in honey (optional).
- Add lemon slices to infusion.
- Let sit for 1–2 hours at room temperature.
- Strain and store in an airtight container.
- Chill and serve over ice.
Notes
- Simmer longer for a bolder flavor.
- Fresh ginger works too, just double the amount.
