This Recipe for Pineapple Heaven Cake combines crushed pineapple and toasted coconut for a moist, tropical dessert with a sweet glaze.

Ingredients

Scale
  • 1 box yellow cake mix (2 layer size)
  • 1 can crushed pineapple (20 ounce)
  • 3 large eggs
  • 1/2 cup plus 1 tablespoon cup butter, melted
  • 1 cup plus 1 tablespoon cup powdered sugar
  • 1 can pineapple tidbits (8-ounce), drained with juice reserved
  • 1/2 cup whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sweetened flaked coconut, toasted

Instructions

    1. Mix the cake mix, undrained crushed pineapple, eggs, and 1/2 cup melted butter in a large bowl.
    2. Beat the batter for 2 minutes using an electric mixer on medium speed.
    3. Pour the mixture into your prepared 9×13-inch pan.
    4. Bake for 30 to 35 minutes until a toothpick comes out with a few moist crumbs.
    5. Cool the cake completely on a wire rack for about 1 hour.
    6. Whisk the powdered sugar, 1 tablespoon melted butter, and 2 tablespoons reserved pineapple juice for the glaze.
    7. Drizzle the glaze over the cooled cake and top with pineapple tidbits.
    8. Beat the whipping cream, vanilla, and 1 tablespoon powdered sugar until soft peaks form.
    9. Serve each slice with a generous dollop of whipped cream and toasted coconut.

Notes

  • Toast your coconut in a dry pan over medium heat until golden. Watch it closely because it burns very quickly.
  • Always insert your toothpick into the center of the pan. If it comes out clean, the cake is likely overbaked.
